Baked nachos with beef and cheese

A sheet-pan supper that turns frozen nachos into a hot dinner by baking them until the cheese melts and crisps at the edges. The beef and cheese are already inside, so all you do is heat and serve with salsa and sour cream.

Serves 2. 20 minutes, 5 at the stove.

  1. Heat the oven to 425°F [220°C].
  2. Spread 45 of the frozen nachos in a single layer on a sheet pan, leaving space between each one so they crisp rather than steam.
  3. Bake until the cheese is melted and the edges of the chips are golden, about 15 minutes.
  4. Season with a pinch of salt and pepper, then divide between two plates and top with salsa and sour cream.

Note Swap in hot sauce for salsa if you like heat. Leftover nachos do not keep well; use them all tonight. Serve with a cold beer or a lime-dressed salad to cut the richness.
