Crisp steak fries with fried eggs and greens

Golden steak fries become dinner when topped with a fried egg and wilted greens, the whole thing finished with salt and pepper. This shelf gives you the base; you add what makes it a meal.

Serves 2. 25 minutes, 10 at the stove.

  • 4 oz spinach or other leafy greens

  • one 20 oz bag golden steak fries french fried potatoes

  • 2 tablespoons oil
  • to taste salt

  • 2 eggs

  1. Spread the golden steak fries on a sheet pan and bake at 400°F (200°C) for 18 to 20 minutes, stirring halfway through, until they are golden and crisp at the edges and tender inside.
  2. While the fries cook, heat 2 tablespoons oil in a large skillet over medium-high heat. Add 4 oz spinach or greens and toss for 2 to 3 minutes until wilted, then push to the side of the pan.
  3. Crack 2 eggs into the cleared side of the skillet, reduce heat to medium, and cook until the whites are set but the yolks remain runny, about 3 minutes.
  4. Divide the crisp fries between two plates. Top each portion with half the wilted greens and one fried egg. Season with salt and pepper to taste.
  5. Serve right away while the fries are hot and the yolks run into the greens and potatoes.

Note Swap the greens for sautéed mushrooms, sliced onion, or grated cheese if you have them. Leftovers do not keep well; eat this meal fresh. A few pickled onions or hot sauce on the side lifts the whole plate.
