Tater tot hash with fried eggs

Golden tater tots crisped in a skillet become the base for a simple hash, topped with fried eggs and a pinch of pepper. The frozen potatoes do the heavy lifting tonight, turning a weeknight dinner around in under twenty minutes.

  • 1 bag (about 14 oz) golden tater tots seasoned shredded potatoes

  • 2 tablespoons oil
  • pinch salt
  • pinch pepper
  • 4 eggs

  1. Heat 2 tablespoons oil in a large skillet over medium-high heat. Spread the frozen tater tots in an even layer and cook, stirring every 2 minutes, until golden brown and crispy, about 8 minutes total. Season with a pinch of salt and pepper.
  2. Push the hash to the sides of the skillet, leaving a center well. Crack 4 eggs into the pan and let them cook until the whites are set but the yolks still jiggle, about 3 minutes.
  3. Divide the hash between two plates and top each with 2 fried eggs. Serve at once.

Note Swap in any frozen potato product you have; home fries or diced hash browns work just as well. Leftovers keep refrigerated for two days and reheat in a skillet with a little oil. Serve with hot sauce, ketchup, or a simple green salad on the side.
