Pan-fried ham with egg and toast

Sliced ham from the deli case crisps quickly in a hot pan and becomes dinner with a fried egg and buttered toast. The ham's honey sweetness plays against a soft yolk here, and there's enough protein to sustain you through the evening.

Serves 2. 15 minutes, 12 at the stove.

  • 6 oz deli fresh honey sliced lunch meat uncured ham

Staples

  • 2 tablespoons butter
  • 2 eggs
  • to taste salt
  • to taste pepper

  1. Set a skillet over medium-high heat and lay in 6 oz of ham slices in a single layer, working in batches if they overlap. Cook until the edges brown and curl, about 2 minutes a side, then move to a plate.
  2. Reduce heat to medium and add 1 tablespoon of butter to the same skillet. Once it foams, crack 2 eggs into the pan and cook until the whites set but the yolk remains soft, about 3 minutes, seasoning with salt and pepper.
  3. Toast 2 slices of bread and spread with 1 tablespoon of butter. Divide the ham between two plates, top each with an egg, and serve the toast on the side.

Note Swap the egg for a slice of cheese melted over the warm ham if you prefer. Leftovers keep in the refrigerator for two days; reheat gently. Serve with a simple salad or steamed greens on the side.
