Oscar Mayer chicken breast with pan tomatoes

  • 1 pound (about 3 medium) tomatoes

  • 1 package Oscar Mayer roasted garlic & herb seasoned chicken breast

Staples

  • 2 tablespoons oil
  • 1 clove garlic
  • 1 small onion
  • to taste salt
  • to taste pepper

  1. Heat 2 tablespoons oil in a large skillet over medium-high heat. Dice 1 small onion and mince 1 clove garlic, add them to the pan, and cook until the onion softens, about 3 minutes.
  2. Chop 1 pound tomatoes into chunks and add them to the skillet with salt and pepper to taste. Cook until the tomatoes break down and release their juice, about 5 minutes, stirring occasionally.
  3. Slice the Oscar Mayer chicken breast into thin strips and add to the pan just to warm through, about 2 minutes.

Note Swap tomatoes for a 14-ounce can of diced tomatoes if fresh are not on hand. Leftovers keep in the refrigerator for two days. Serve over rice or pasta to stretch the chicken, or with crusty bread to soak up the sauce.
