Charred chicken with street-style corn

- 2 tablespoons oil
- Pat 1 lb boneless chicken thighs dry and season both sides with salt and pepper. Heat 2 tablespoons oil in a large skillet over medium-high heat until shimmering, then lay the chicken in the pan without moving it. Let the first side sear and brown, about 6 to 8 minutes; while this cooks, open the jar of corn and pour it into a bowl.
- Flip the chicken and cook the second side until golden and the thickest part reaches 165°F [74°C], about 5 to 7 minutes. Transfer the chicken to a plate and tent loosely with foil.
- Pour the jar of corn with all its liquid into the same skillet and warm it over medium heat, stirring gently and tasting as it comes to heat, about 3 to 4 minutes. The corn will soften and the cheese will blend in; once hot through and the poblano has darkened slightly, it is done.
Note Swap the chicken for flaked cod or firm tofu if you like. Leftovers keep covered in the fridge for two days. Serve alongside lime wedges, cotija cheese if you have it, and soft flour tortillas, or pour the warm corn into bowls and top with the sliced chicken.
