Salsa chicken and rice for two

A weeknight staple built on jarred salsa: chicken braises in tomato heat while rice absorbs the sauce. This shelf holds everything you need except the protein. Dinner in thirty minutes from a single pan.

  • 1 can or 14 oz chicken broth

  • 1 tablespoon oil
  • to taste salt

  • 1 cup rice
  • 1 medium onion
  • 2 cloves garlic

  1. Heat 1 tablespoon oil in a wide skillet over medium-high. Slice 1 medium onion and mince 2 garlic cloves. Season two boneless chicken breasts with salt and pepper, then sear them skin-side down until golden on both sides, about four minutes total. Set the chicken aside.
  2. In the same pan, sauté the onion until soft, about three minutes, stirring in the minced garlic for the last minute. Add 1 cup rice and stir until it turns translucent, about two minutes.
  3. Pour in the entire jar of salsa and 1 can chicken broth, scraping up any browned bits from the bottom of the pan. Return the chicken breasts to the pan, nestling them into the rice. Bring to a simmer, then cover and lower the heat to medium-low.
  4. Cook covered until the rice is tender and the chicken reaches 165°F [74°C] at the thickest part, about eighteen minutes. Let it rest off heat for three minutes before serving straight from the pan.

Note Swap chicken for pork tenderloin cut into chunks or add black beans for vegetarian. Leftovers keep three days in the fridge and reheat gently with a splash of water. Serve with lime wedges, sour cream, and cilantro on the side.
