Apple smoked chicken sausage with apples and greens

Perdue's apple-laced sausages have enough sweet-savory depth to carry a quick sheet pan dinner. Fresh apples and hearty greens balance the richness, and the whole thing comes together while you preheat the oven, giving you time to rest before eating.

  • 4 ounces hearty greens, such as kale or collards

  • 4 links apple hardwood smoked chicken sausages (Perdue)
  • 1 large apple

Staples

  • 2 tablespoons oil
  • to taste salt

  1. Heat your oven to 425°F [220°C]. Cut 4 sausage links on the diagonal into 1-inch pieces. Core 1 large apple and cut it into 1-inch wedges.
  2. Toss the sausage and apples with 2 tablespoons oil, salt, and pepper on a sheet pan, spread in a single layer, and roast for 12 minutes.
  3. While the pan roasts, strip 4 ounces of hearty greens from their stems and coarsely chop them. When the sausage and apples have roasted and the sausage is browned at the edges, push everything to the sides of the pan and mound the greens in the center.
  4. Drizzle the greens with a pinch of salt and pepper, toss everything together gently, and return to the oven for 3 minutes until the greens are just wilted.

Note Swap collards for kale if that is what you have. The pan keeps in the fridge for two days and reheats gently in a 350°F [175°C] oven. Serve with crusty bread or rice to soak up the juices.
