Crispy chicken popcorn over greens

Perdue popcorn chicken bites are already seasoned and breaded, so they go straight into the oven while you dress a green salad. Dinner in twenty minutes, with the warm chicken scattered over cool lettuce and a quick vinaigrette.

  • one 10 oz box Perdue chicken breast popcorn bites

Staples

  • 2 tablespoons oil
  • 1 tablespoon vinegar
  • pinch salt
  • pinch pepper

  1. Heat the oven to 400°F [200°C]. Spread the chicken popcorn bites on a sheet pan and bake for 12 to 15 minutes, until the coating is golden and crisp.
  2. While the chicken cooks, put 4 oz of mixed greens in a bowl. Whisk together 2 tablespoons of oil, 1 tablespoon of vinegar, a pinch of salt, and a pinch of pepper.
  3. Pour the vinaigrette over the greens and toss gently. Divide between two plates and top each with half the warm chicken popcorn bites.

Note Swap the greens for shredded cabbage or arugula. Leftovers keep for one day in the fridge and reheat on a sheet pan. Serve with ranch dip or hot sauce on the side, or toss the chicken into the greens while still warm for a warm salad.
