Toasted bagels with cream cheese and smoked salmon

The stuffed bagels carry their own cream cheese filling, so all you need is a topper to make dinner. Smoked salmon, capers, and red onion turn them into an open-faced sandwich that comes together in the time it takes to toast.

Serves 2. 10 minutes, 5 at the stove.

  • 4 ounces smoked salmon
  • 2 tablespoons capers

  1. Split the four bagels in half and toast them until the exteriors are crisp and the insides warm, about 4 minutes.
  2. Lay a slice of smoked salmon on each warm bagel half, then scatter one teaspoon of capers over each. Finish with a pinch of salt and pepper.
  3. Divide between two plates and eat while the bagels are still warm.

Note Swap the smoked salmon for sliced cucumber and tomato if you prefer. Leftovers keep cold for one day. Serve with a simple green salad or lemon wedges to brighten the plate.
