Roasted Brussels Sprouts with Garlic and Thyme

Frozen baby brussels sprouts roast into crispy, tender sides of themselves in one pan, no thawing required. Toss them with garlic, butter, and thyme from the cupboard and they become the whole dinner, hearty enough to serve two with bread and a glass of wine.

  • 12 ounces baby brussels sprouts (Pictsweet Farms)

  • 3 tablespoons oil
  • to taste salt

  • 3 cloves garlic
  • 1 tablespoon butter
  • 1 teaspoon thyme

  1. Heat the oven to 400°F [200°C]. Toss the 12 ounces of frozen brussels sprouts with 3 tablespoons of oil, salt, and pepper in a large skillet and spread them in a single layer, cut side down when possible. Set the skillet in the oven.
  2. Roast for 20 minutes while you peel and mince 3 cloves of garlic.
  3. Pull the skillet from the oven; the sprouts should have browned undersides. Stir in 1 tablespoon of butter and the minced garlic, scatter 1 teaspoon of dried thyme over the top, and taste for salt and pepper.
  4. Return to the oven for 5 more minutes, until the garlic is fragrant and the sprouts are tender when pierced with a knife.

Note Swap the thyme for dried oregano or rosemary if you have it. Leftovers keep in the fridge for three days and reheat well in a hot skillet or oven. Serve with crusty bread, a sharp cheese, and a grain of rice or farro to make it a full meal.
