Roasted brussels sprouts with garlic and brown butter

Brussels sprouts from the freezer become dinner when you brown them hard in a hot pan and finish them with nutty butter, garlic, and a squeeze of lemon. This shelf makes it simple.

  • one 16-ounce bag (about 3 cups) halved brussels sprouts (Pictsweet Farms)

  • 2 tablespoons oil
  • to taste salt
  • to taste pepper
  • 3 tablespoons butter
  • 2 cloves, sliced thin garlic

  1. Heat 2 tablespoons oil in a large skillet over medium-high heat until it shimmers. Add the brussels sprouts in a single layer and let them sit for 3 minutes without stirring until the cut sides brown.
  2. Toss the sprouts and scatter them back in the pan in a single layer. Cook undisturbed for 3 more minutes until the other sides caramelize.
  3. Toss again and cook for 2 more minutes, stirring occasionally, until they are tender and deeply browned all over.
  4. Add 3 tablespoons butter and 2 sliced garlic cloves, stirring constantly until the butter foams and turns golden brown with a nutty smell, about 1 minute.
  5. Take the pan off the heat and squeeze half a lemon over the sprouts. Season with salt and pepper and serve at once.

Note Swap in a pinch of red pepper flakes or cayenne with the garlic for heat. Leftovers keep cold in the fridge for three days and taste good at room temperature with a squeeze of fresh lemon. Serve alongside roasted chicken, grilled fish, or a grain bowl.
