Skillet brownie with chocolate cookie batter
This is not a dessert disguised as dinner but an actual sheet pan meal: crisped cookie dough over eggs baked in one skillet, with the marshmallows and peanuts providing substance and the chocolate keeping everything savory enough for the table. The shelf has done the heavy lifting tonight.

From your shelf
- 17.5 oz package Pillsbury chocolate cookie dough with marshmallows, peanuts and chocolate chips
Staples
- 1 tablespoon butter
- 4 eggs
- 1/4 teaspoon salt
- pinch pepper
- Heat 1 tablespoon butter in a 10-inch cast iron or nonstick skillet over medium heat. Break off golf ball-sized pieces of the cookie dough and press them into the bottom of the pan to form a crust, leaving a well in the center; cook until the edges are set and golden, about 5 minutes.
- Crack 4 eggs into the well, season with 1/4 teaspoon salt and a pinch of pepper, and simmer until the whites are set and the yolks are still soft, 6 to 8 minutes. While the eggs cook, crumble the remaining cookie dough and scatter it over the top.
- Slide the skillet under a hot broiler for 1 to 2 minutes to toast the crumbled dough and warm the top layer, watching closely so it does not burn, then bring straight to the table.
Note If you find the eggs too runny, cover the skillet and cook 2 minutes longer before broiling. Leftovers keep cold for one day and reheat well in a low oven. Serve with hot sauce and a tangy green salad, or halve it and save half for lunch.
