Thai red curry fish with rice noodles

This ready-made curry just needs gentle reheating and a few fresh touches to become dinner. The rice noodles and flaked fish are already cooked, so you'll be done in minutes. Serve it as-is for a quick meal or dress it up with fresh herbs and a squeeze of lime.

  • small handful fresh cilantro or Thai basil

  • one package Thai red curry fish with rice noodles

  • 1 tablespoon oil
  • 1 clove, minced garlic

  1. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Stir in 1 minced garlic clove and cook for 30 seconds until fragrant.
  2. Open the package and pour the contents into the hot pan. Stir often to separate the noodles and heat through until steaming, about 3 to 4 minutes.
  3. Divide between two bowls. Cut a lime into wedges, scatter the fresh cilantro or Thai basil over each bowl, and serve with lime wedges on the side for squeezing.

Note To make it stretch further, add diced cucumber, bell pepper, or shredded carrots to each bowl. Leftovers keep three days refrigerated; reheat gently in a pan with a splash of water over medium heat. Serve with a cold beer or jasmine tea, or toss any extra vegetables through to make a cold noodle salad the next day.
