Skillet tacos with quick taco mix

Ground beef tacos built around a packet of taco seasoning, cooked start to finish in one skillet. The seasoning handles the heat and depth; you just brown the meat and build the base. Dinner in twenty minutes.

  • 1 pound ground beef
  • 8 corn tortillas

  • 1 packet taco seasoning mix, taco (Shurfine)

  • 1 tablespoon oil
  • to taste salt

  1. Heat 1 tablespoon oil in a skillet over medium-high heat. Brown 1 pound ground beef, breaking it up with a spoon as it cooks, until no pink remains, about 5 minutes.
  2. Pour off any excess fat, leaving about 1 tablespoon in the pan. Add the entire packet of taco seasoning and 1/3 cup water, stir well, and simmer for 2 minutes until the sauce coats the meat.
  3. Warm 8 corn tortillas in the skillet over the meat for 30 seconds per side, or stack them wrapped in foil at the edge of the heat. Taste the meat and add salt and pepper as needed.

Note Swap corn tortillas for flour ones or serve in lettuce cups. Leftover meat keeps three days covered in the fridge and reheats gently in a covered skillet. Top tacos with diced onion, cilantro, lime wedge, or hot sauce if you have them.
