Sloppy joes on toasted buns

The jarred sauce does the work here, sweetened and spiced, needing only ground beef to become dinner. Brown the meat, stir in the sauce, and toast the buns while everything comes together in the pan. Weeknight comfort food when time is short.

  • 2 burger buns

  • 1 jar [12 oz] traditional sloppy joe sandwich sauce

  • 1 tablespoon oil
  • to taste salt

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add 1 lb ground beef, breaking it apart with a wooden spoon as it cooks until no pink remains, about 5 minutes. Drain excess fat if needed.
  2. Stir in the entire jar of sloppy joe sauce, scraping the bottom of the pan. Simmer for 3 to 4 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld. Taste and season with salt and pepper.
  3. While the sauce simmers, split the 2 buns and toast them cut-side up in a toaster oven or under the broiler until golden, about 2 minutes. Watch closely so they don't char.

Note Swap the ground beef for ground turkey or crumbled tofu if you prefer. Leftovers keep in the fridge for three days and reheat gently on the stovetop. Serve with pickles, coleslaw, or potato chips on the side to cut the richness of the sauce.
