Pad thai noodle bowl, warmed and topped

This shelf brings you a full pad thai bowl ready to warm and eat, so dinner is as simple as heating and garnishing. The noodles stay tender when you warm them gently in a covered pan with a splash of water, and a handful of fresh toppings finish it into something you'll want to eat again tomorrow.

  • 1 bunch cilantro

  • 1 teaspoon oil

  1. Heat 1 teaspoon oil in a large skillet or wok over medium heat. Pour the entire pad thai bowl into the pan, breaking up the noodles as they warm, and stir often until steaming throughout, about 4 minutes.
  2. Divide the warmed noodles between two bowls. Cut the lime into wedges and tear a small handful of cilantro leaves over each bowl.
  3. Squeeze lime wedges over each bowl to taste and eat right away while the noodles are warm.

Note Swap the lime for a small drizzle of rice vinegar if you prefer. Leftovers keep covered in the refrigerator for two days and are good cold or warmed gently in the microwave. Serve with a cold beer or jasmine tea, or stretch it with a side of cucumber slices and steamed broccoli.
