Chicken thighs with tzatziki cucumber dressing

- 1 cup [240 ml] tzatziki cucumber dressing

- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon oil
- Heat your oven to 425°F (220°C). Pat 4 bone-in chicken thighs dry with paper towels and season both sides with 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat 1 tablespoon oil in an oven-safe skillet over medium-high heat, then lay the thighs skin-side down and cook for 5 minutes until the skin browns.
- Flip the thighs skin-side up and pour 3/4 cup of the tzatziki cucumber dressing evenly over them. Transfer the skillet to the oven and roast for 25 to 30 minutes, until the thighs reach 165°F (74°C) at the thickest part and the skin is caramelized.
- Remove from the oven and let rest for 5 minutes. Spoon the pan juices and remaining dressing over the thighs and serve warm from the skillet.
Note Swap bone-in chicken breasts if thighs are hard to find; they will need about 20 minutes at 425°F. Leftovers keep covered in the fridge for three days and are good cold the next day with a green salad. Serve with rice or crusty bread to catch the dressing.
