Creamy coconut curry with rice and greens

A quick curry built on the shelf's coconut-oat cream, spiked with garlic and ginger, that cooks while rice steams. The cream gives body without dairy, turning humble pantry staples into something warm and filling on a busy night.

Serves 2. 35 minutes, 15 at the stove.

  • 1 ounce fresh ginger
  • 4 ounces frozen spinach or bok choy

  • 1 1/2 cups Silk oatmilk and coconutmilk half & half

Staples

  • 2 tablespoons oil
  • 1 medium onion
  • 3 cloves garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2/3 cup rice
  • 1 1/3 cups water

  1. Set a pot of 1 1/3 cups water and 2/3 cup rice on the stove over high heat with 1/4 teaspoon salt; bring to a boil, then cover and lower to a simmer.
  2. While rice steams, warm 2 tablespoons oil in a skillet over medium-high heat. Dice 1 medium onion and mince 3 cloves garlic and 1 ounce fresh ginger; cook in the hot oil until softened and fragrant, about 3 minutes.
  3. Add 1 1/2 cups of the shelf's cream to the skillet and stir to combine with the aromatics. Simmer gently for 3 minutes as it heats through.
  4. Stir 4 ounces frozen spinach or bok choy into the curry; break it up with the spoon as it wilts, about 2 minutes. Taste and adjust salt and 1/4 teaspoon pepper.
  5. When rice is tender and water is absorbed, fluff it with a fork. Spoon the curry over each portion of rice.

Note Swap the greens for any frozen vegetable, or stir in canned chickpeas for protein. Leftovers keep covered in the fridge for two days and reheat gently on the stove. Serve with lime wedges and a side of crusty bread to soak the sauce.
