Fruit compote with yogurt and granola

You have shelf-stable fruit cups meant for snacking, but tonight they become a warm compote with crisp oat topping. This is a weeknight dessert that also makes a good breakfast, built from what you already hold.

Serves 2. 15 minutes, 8 at the stove.

  • 1 cup plain yogurt

  • 2 bowls cherry mixed fruit peaches, pears and cherries in 100% juice snack bowls

Staples

  • 2 tablespoons butter
  • 1/2 cup rolled oats
  • pinch salt

  1. Empty the 2 fruit bowls into a small saucepan and warm over medium heat for 3 to 4 minutes, stirring gently once or twice, until the juice simmers and the fruit is warm. The fruit should be soft and the juice thickened slightly.
  2. While the fruit warms, melt 2 tablespoons butter in a skillet over medium-high heat. Stir in 1/2 cup rolled oats and a pinch of salt, then toast for 2 to 3 minutes, stirring often, until fragrant and lightly golden.
  3. Divide 1 cup plain yogurt between two bowls. Spoon the warm fruit and juice over the yogurt, then top each with the toasted oats. Serve at once.

Note Swap store-bought granola for the toasted oats if you have it. Yogurt keeps open for a week; leftover compote can be chilled and eaten cold. Serve with tea or coffee, or make it breakfast tomorrow.
