Bulgur with grilled vegetables and herbs

A swift grain bowl built on one clever product: precooked bulgur mixed with grilled vegetables and herbs ready to warm and dress. All you need is heat, acid, and fat to turn shelf-ready ingredients into dinner for two.

  • 2 tablespoons lemon or vinegar

  • 1 package bulgur and grilled vegetables blend

Staples

  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 1 clove, minced garlic

  1. Heat 2 tablespoons olive oil in a wide pan over medium heat. Pour in the entire package of bulgur and grilled vegetables, stirring often, until warmed through and beginning to colour at the edges, about 8 minutes.
  2. Off heat, stir in 2 tablespoons lemon juice or vinegar and 1 minced garlic clove. Taste and season with salt and pepper as needed.

Note Swap lemon for any vinegar, or for the juice of half an orange. Store leftovers in the refrigerator up to three days; reheat gently with a splash of water. Serve with feta cheese, yogurt, or a fried egg on top to turn this grain bowl into something richer.
