Sheet pan fish with pineapple mango salsa

Mild white fish becomes dinner in thirty minutes when dressed with bright, sharp salsa that needs no further seasoning. The ginger and citrus in this jar do the work while you roast, so you're free to make a side without fuss.

Serves 2. 30 minutes, 10 at the stove.

You need

To buy

  • 2 fillets, about 6 oz [170 g] each white fish fillets (cod or halibut)
  • 1 lime

  • 1 jar [240 g] pineapple, mango & ginger salsa

Staples

  • 1 tablespoon oil
  • to taste salt
  • to taste pepper

  1. Heat your oven to 400°F [200°C]. Brush 1 tablespoon oil over a sheet pan, lay down 2 fish fillets, and season them with salt and pepper. Roast until the fish is opaque at the thickest part, about 12 to 15 minutes.
  2. While the fish cooks, pour the jar of salsa into a bowl. Squeeze the lime juice into it and stir to combine.
  3. When the fish is cooked through, transfer it to plates and spoon the chilled salsa over each fillet.

Note Swap white fish for shrimp if you prefer, lowering roast time to 8 minutes. Leftovers keep three days in the fridge. Serve with steamed rice or a simple green salad on the side.
