Egg salad on toasted bread

This shelf holds a jar of prepared egg salad that needs little more than bread and heat. Toast thick slices, spread the salad on warm bread, and dinner is ready in minutes. A tired weeknight calls for this kind of shortcut.

Serves 2. 10 minutes, 5 at the stove.

  • 1 tablespoon butter

  1. Heat a large skillet over medium heat. Spread 1 tablespoon butter on 4 thick slices of bread. When the skillet is hot, place the bread slices butter side down and toast until golden and crisp, about two minutes per side.
  2. Spread half the jar of egg salad onto two of the toasted bread slices. Add lettuce or tomato if using. Top with the remaining two slices of toast.
  3. Cut the sandwiches in half and serve warm.

Note Swap thick bread for thinner white bread, or use a toaster oven if you prefer. Leftovers keep two days wrapped in foil and reheat gently in a skillet. Serve with a pickle, chips, or a simple salad to stretch the meal.
