Grilled melon and fruit salad with prosciutto

A warm salad built from the fruit blend on your shelf, with crisped prosciutto and a sharpness of lime to cut the sweetness. Quick enough for a weeknight when you need something that feels composed but barely qualifies as cooking.

  • 4 slices prosciutto
  • 1 lime

  • one 12-ounce package seasonal fruit blend

Staples

  • 1 tablespoon oil

  1. Lay 4 slices of prosciutto across the rack of a hot skillet or griddle and cook until the edges crisp and the surface browns, about 2 minutes a side, moving it once halfway through. Transfer to a plate to cool.
  2. Spread 1 tablespoon of oil across the same hot pan and lay down the melon and pineapple pieces from your fruit blend (cut any large cantaloupe or honeydew into bite-sized chunks if needed). Let them sit until the cut sides caramelize and char at the edges, about 3 minutes, then turn and cook the other side until warm and spotted, another 2 minutes.
  3. Scatter the grapes and kiwi into the pan with the warm melons and toss everything together off heat until just combined, about 1 minute.
  4. Tear the cooled prosciutto into bite-sized pieces and fold into the fruit along with the juice of half a lime. Season with salt and pepper to taste. Divide between two bowls and squeeze the remaining lime half over the top.

Note Swap the prosciutto for crispy bacon or omit it altogether for a vegetable-friendly version. Leftovers keep covered in the fridge for one day but eat best warm. Serve on its own as a light dinner, or with crusty bread and a soft cheese to make it more substantial.
