Yogurt and honey-roasted chickpea bowl

A quick bowl that turns greek yogurt into a complete dinner with roasted chickpeas, grain, and greens. The yogurt becomes a rich base sauce while the chickpeas add crunch and protein. Nothing fussy, just toss and eat.

Serves 2. 25 minutes, 10 at the stove.

  • 1 can (15 ounces) canned chickpeas
  • 2 cups fresh spinach or arugula

  • 1 cup [240 ml] Trader Joe's vanilla greek nonfat yogurt

  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cloves garlic
  • 1 cup cooked rice

  1. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Drain and pat dry 1 can of chickpeas, then spread them in the pan with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Let them sit until they start to brown, about 3 minutes.
  2. Toss the chickpeas and cook until they are golden and crisp on the outside, about 5 more minutes, stirring occasionally. While they cook, mince 2 garlic cloves and stir them into 1 cup of the yogurt with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper to make a sauce.
  3. Divide 1 cup of cooked rice between two bowls. Top each with 1 cup of fresh spinach or arugula and half the roasted chickpeas, then spoon half the yogurt sauce over each bowl.

Note Swap the rice for pasta or couscous if you have it. Leftovers keep for two days refrigerated, though the chickpeas soften; reheat gently. Serve with lemon wedges if you have them, or a simple green salad on the side to stretch it further.
