Meatball pasta in tomato broth

Bonici meatballs need only a quick broth and pasta to become dinner, and this shelf's entire inventory makes it happen in one pot. The broth stays light and the meatballs hold their shape, ready to eat in under twenty minutes.

  • 14 ounces canned crushed tomatoes
  • 4 cups chicken broth

  • 2 cloves garlic
  • 1 tablespoon oil

  1. Bring 4 cups chicken broth to a boil in a large pot with 1 tablespoon oil and 2 minced cloves garlic. Slide 0.5 oz bonici meatballs into the broth once it reaches a gentle boil.
  2. When meatballs surface, about 3 to 4 minutes, add 6 oz dried pasta and stir to keep it from sticking to the bottom. Add 14 ounces canned crushed tomatoes.
  3. Cook until pasta reaches your preferred doneness, about 10 more minutes. Taste and add salt and pepper as needed.

Note Swap the canned tomatoes for chicken broth if you want a brothier bowl, or add 2 tablespoons tomato paste for a deeper flavor. Leftovers keep covered for up to three days; reheat gently on the stovetop with a splash of water. Serve with grated Parmesan and crusty bread.
