To buy
- 2 tablespoons soy sauce
- 1 bunch scallions
From your shelf
- 1 kit hibachi style beef stir fry with noodles, hibachi style beef (Tyson)
Staples
- 2 tablespoons oil
- to taste salt
- to taste pepper
- 2 cloves garlic
- 1 tablespoon butter
- Bring a pot of salted water to a boil while you mince 2 cloves garlic. Heat 1 tablespoon oil in a large skillet over high heat until it smokes.
- Drop the yakisoba noodles into the boiling water and cook until just tender, about 3 minutes, stirring once. Drain and set aside.
- While the noodles cook, sear the diced beef in the hot skillet in one layer until the edges brown, about 2 minutes, then stir and cook another minute. The beef should be mostly opaque. Push to the side of the pan.
- Add 1 tablespoon oil and the minced garlic to the empty side of the pan and let it sizzle 10 seconds, then toss with the beef. Add the drained noodles and 2 tablespoons soy sauce, stirring everything to coat, about 1 minute.
- Remove from heat and stir in 1 tablespoon butter until it melts. Taste and add salt and pepper as needed. Plate and scatter sliced scallions over the top.
Note The yakisoba takes a firm hand; don't stir it constantly or it breaks. Leftovers keep three days cold and reheat well in a hot skillet with a splash of soy. Serve with a green salad or pickled ginger on the side if you have it.
