- Bring a large pot of salted water to a boil and cook 8 ounces of pasta until just shy of tender, about two minutes before the package says it is done. Drain and set aside, reserving 1 cup of the cooking water.
- While the pasta cooks, warm 3 tablespoons of butter in another large pan over medium heat. Whisk in 2 tablespoons of flour to form a paste, cook for one minute, then slowly pour in 2 cups of almond milk, stirring constantly, until the sauce thickens and no lumps remain, about three minutes.
- Add 3 sliced garlic cloves to the sauce, stir and cook for one minute until fragrant.
- Add the drained pasta and 4 ounces of fresh spinach or kale to the sauce along with 1/4 cup of the reserved pasta water. Stir until the greens wilt and the pasta finishes cooking in the sauce, about two minutes.

- 1 small bunch fresh sage

- 8 ounces [225 grams] pasta
- 3 tablespoons [42 grams] butter
- 4 cloves garlic

- 1 tablespoon oil
- Bring a large pot of salted water to a boil and cook 8 ounces of pasta until one minute before tender; reserve 1 cup of the cooking water, then drain.
- While the pasta cooks, slice 4 garlic cloves thin. Heat 1 tablespoon of oil and 3 tablespoons of butter in a wide skillet over medium heat, add the garlic, and cook for two minutes, stirring often, until fragrant and just starting to turn light gold.
- Pour in the almond milk and bring it to a gentle simmer, then tear in a small handful of fresh sage leaves. Let it bubble gently for one minute to let the sage release its oils.
- Add the drained pasta to the skillet with 1/2 cup of the reserved cooking water, season with salt and pepper, and toss gently for about one minute over medium heat until the sauce clings to each strand and thickens slightly. Add more cooking water if it tightens too much.
