- Cut a handful of cold cuts into strips or bite-sized pieces and set aside. Slice 1 large onion into thin half-moons.
- Heat 2 tablespoons of oil in a large skillet over medium-high heat and add the onions, stirring occasionally until they are soft and golden at the edges, about 8 minutes. When the onions begin to char in spots, push them to one side of the pan.
- Add the cold cuts to the empty side of the pan and cook, stirring once or twice, until the edges curl and crispen, about 3 minutes. Toss the onions and cold cuts together and taste, adding salt and pepper as needed.
