Sautéed grain bowl with spelt, lentils and brown rice

This grain blend comes ready to heat, so tonight you build around it with aromatics and a simple pan sauce. The spelt adds nuttiness, the lentils protein, all in one pot, turning weeknight dinner into something that feels composed without the fuss.

  • 1 package [365g] spelt, lentils & brown rice

Staples

  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 small onion
  • to taste salt
  • to taste pepper

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat. Dice 1 small onion and mince 2 garlic cloves, then add both to the pan and cook until softened and fragrant, about 4 minutes, stirring often.
  2. Pour the entire package of spelt, lentils and brown rice into the skillet with the aromatics, stirring to coat and warm through, about 8 minutes, until the grains are heated and starting to brown slightly at the edges.
  3. Squeeze the juice from 1 lemon over the grains, season with salt and pepper to taste, and stir to combine. Taste and adjust seasoning, then divide between two bowls and serve warm.

Note Swap the lemon for any vinegar or fresh herbs you have. Leftovers keep in the fridge for three days and reheat gently with a splash of water. Serve with roasted vegetables, a fried egg, or raw greens on the side.
