Cinnamon raisin bagel strata

Strata is a savory bread custard, but these sweet bagels turn it into a spiced brunch dish that works just as well for dinner. The bagels soak up eggs and milk while cinnamon and raisins deepen in the oven, and the whole thing bakes into a creamy, custardy casserole.

  • 3 eggs
  • 1/4 teaspoon salt

  1. Heat the oven to 350°F [175°C]. Butter a 2-cup baking dish.
  2. Slice the 3 bagel halves in half again to make 12 pieces and arrange them in the baking dish. Whisk together 3 eggs, 1 cup whole milk, 1/2 teaspoon vanilla extract, and 1/4 teaspoon salt until smooth.
  3. Pour the custard over the bagel pieces, pressing them down gently so they absorb the liquid. Let sit for 5 minutes while the oven finishes heating.
  4. Bake until the custard is set but still slightly jiggly in the center, about 25 minutes.

Note Swap the cinnamon raisin bagels for plain ones and add 1/2 teaspoon cinnamon and 2 tablespoons brown sugar to the custard. Leftovers keep refrigerated for two days and reheat well. Serve warm with a dollop of sour cream or Greek yogurt.
