Spicy marinara penne with crisp breadcrumbs

The ready-made penne gets dressed up with butter and crisp breadcrumbs for texture and a touch of richness. You'll have dinner on the table in minutes, with a warm bowl of garlicky pasta that tastes like you spent more time than you did.

  • 1/3 cup panko breadcrumbs

  • 1 package spicy marinara penne

Staples

  • 2 tablespoons butter
  • 2 cloves garlic
  • to taste salt
  • to taste pepper

  1. Heat 1 tablespoon of butter in a large skillet over medium-high heat. When foaming, add 1/3 cup panko breadcrumbs and stir constantly until golden and crisp, about 3 minutes. Transfer to a bowl and season with salt and pepper.
  2. In the same skillet, melt 1 tablespoon butter over medium heat. Mince 2 cloves garlic and cook, stirring, until fragrant, about 30 seconds.
  3. Pour the entire package of spicy marinara penne into the skillet with the garlic butter and stir gently to warm through and combine, about 2 minutes.
  4. Divide between two bowls and top each with half the crisp breadcrumbs. Serve at once.

Note Swap the breadcrumbs for grated Parmesan if you have it. Leftovers keep for two days in the refrigerator; reheat gently in a skillet with a splash of water. Serve with a simple green salad or roasted vegetables on the side.
