Sausage and tomato rotini with fresh greens

A ready-made pasta dish that needs only heat and a fresh counterpoint. This boxed rotini has the sauce built in, so tonight you're just finishing it with handfuls of greens that wilt right into the pan, giving the dish body and brightness your tired self will appreciate.

  • 3 cups fresh spinach or arugula

  • 1 box (9 oz) sausage and tomato rotini

  1. Pour the box of rotini into a large skillet and warm over medium heat, stirring often, until heated through and the pasta begins to stick slightly to the pan, about 5 to 7 minutes. The edges will start to brown a bit.
  2. Add 1 tablespoon of olive oil and 3 cups of fresh spinach or arugula, folding it in as it wilts over the heat, until the greens are tender, about 1 minute. Taste and adjust with salt and pepper.

Note Swap the greens for roughly chopped kale if you prefer; add it in the same step and give it two minutes to wilt. This dish keeps in the fridge for two days and reheats gently on the stove over low heat. Serve with grated Parmesan and crusty bread to soak up the sauce.
