Cottage cheese and pineapple with rice

This shelf holds sweet cottage cheese with pineapple, so tonight's dinner is a warm grain bowl built around it. The fruit and curds work well together over rice with toasted nuts and a light spice.

Serves 2. 25 minutes, 8 at the stove.

  • 1 container (about 15 oz) cottage cheese with pineapple

Staples

  • 1 cup rice
  • 1 tablespoon butter
  • to taste salt
  • to taste pepper
  • 2 cloves garlic
  • 1 tablespoon oil

  1. Bring 2 cups water to boil in a pot with a pinch of salt. Stir in 1 cup rice, reduce heat to low, cover, and set a timer for 18 minutes while you finish the other parts.
  2. Mince 2 cloves garlic. Heat 1 tablespoon oil in a skillet over medium heat, add the garlic, and cook until fragrant, about 30 seconds. Do not let it brown.
  3. Add the entire container of cottage cheese with pineapple to the skillet and warm through, stirring gently, until steaming, about 3 to 4 minutes. Season with salt and pepper to taste.
  4. When rice is tender and water is absorbed, fluff with a fork and stir in 1 tablespoon butter. Divide rice between two bowls.
  5. Spoon the warm cottage cheese and pineapple mixture over the rice. Crush and scatter 1/4 cup nuts over top and serve.

Note You can use pecans, walnuts, or peanuts if you prefer. Leftovers keep two days refrigerated in a container; rewarm gently with a splash of water. Serve with a cucumber salad or green salad on the side to balance the sweetness.
