Creamed peas and pearl onions over toast

A quick supper built entirely around one excellent frozen vegetable. The peas and onions come already cooked and seasoned, so you only need to warm them in cream and serve over buttered toast. This is pure comfort in under fifteen minutes.

Serves 2. 15 minutes, 8 at the stove.

  • 1/2 cup heavy cream
  • 4 slices bread

  • 1 bag (10 oz) Birds Eye peas and pearl onions

Staples

  • 2 tablespoons butter
  • to taste salt
  • to taste pepper

  1. Toast 4 slices of bread until golden brown, then butter each one lightly. Arrange on two plates.
  2. Meanwhile, melt 2 tablespoons of butter in a medium pan over medium heat, then pour in the entire bag of peas and onions with its sauce and add 1/2 cup of heavy cream. Stir gently until the mixture comes to a simmer.
  3. Once simmering, taste and adjust with salt and pepper as needed, then divide over the buttered toast and serve at once.

Note Swap the toast for cooked pasta or rice if you prefer. Leftovers keep two days covered in the refrigerator; reheat gently on the stovetop. Serve with a green salad or steamed broccoli on the side to round out the meal.
