Skillet corn and spring vegetables

A weeknight skillet of frozen corn and vegetables that come together in minutes. This is the sort of dish that needs little more than butter and seasoning to shine, so let the sweet corn and fresh-tasting vegetables take the lead here.

Serves 2. 15 minutes, 12 at the stove.

  • one 10 oz bag gold and white corn, carrots and asparagus (Birds Eye)

Staples

  • 2 tablespoons butter
  • to taste salt
  • to taste pepper

  1. Melt 2 tablespoons of butter in a large skillet over medium-high heat. Pour in the frozen corn, carrots, and asparagus from one 10 oz bag and stir to coat.
  2. Cook, stirring often, until the vegetables are heated through and the carrots are tender-crisp, about 8 to 10 minutes; the cue is when steam rises from the pan and you can cut an asparagus spear easily with a wooden spoon.
  3. Season with salt and pepper to taste, then divide between two plates and serve at once.

Note Swap in 2 tablespoons of good olive oil for the butter if you prefer. Leftovers keep in the fridge for up to two days and taste fine cold or reheated gently in the microwave. Serve with grilled chicken, fish, or rice to round out the plate.
