Pasta with peas and parmesan, crisp breadcrumb topping
This shelf holds a solid weeknight dinner that just needs a textured finish. A crisp breadcrumb topping turns the sauce-bound pasta into something that feels composed, and a pinch of heat brings out the cheese.

Staples
- 2 tablespoons oil
- to taste salt
- to taste pepper
- 1 clove, minced garlic
- 1/4 teaspoon dried oregano
- Heat 1 tablespoon oil in a large skillet over medium-high heat. Stir in 1/2 cup panko breadcrumbs, 1 minced clove garlic, and 1/4 teaspoon dried oregano, and cook, stirring often, until golden and fragrant, about 4 minutes.
- Scrape the breadcrumb mixture onto a plate and return the pan to medium heat with 1 tablespoon oil. Cook the entire box of pasta and peas with sauce, stirring gently, until heated through, about 8 minutes.
- Divide the pasta between two bowls, scatter the breadcrumb topping over each, and finish with a pinch of red pepper flakes and a grinding of pepper.
Note Swap panko for crushed crackers or toasted nuts if needed. Leftovers keep three days, reheated gently in a skillet with a splash of water. Serve with a simple green salad and crusty bread to soak up the sauce.
