Southwest tuna bowls with lime crema

These ready-made bowls need only a finishing touch to shine on a weeknight. A dollop of lime-spiked crema lifts the tuna and beans into something fresher and more alive than the can alone.

Serves 2. 10 minutes, 10 at the stove.

  • 1/3 cup sour cream

  • 2 cans southwest style quick catch tuna bowls

Staples

  • pinch salt
  • 1 tablespoon lime juice
  • 1 clove garlic

  1. Mince 1 clove garlic and whisk into 1/3 cup sour cream with 1 tablespoon lime juice and a pinch of salt until smooth.
  2. Open and divide the 2 tuna bowls between two serving bowls; warm gently in the microwave for 30 seconds if you like them warm, or serve at room temperature.
  3. Top each bowl with a spoonful of lime crema and serve at once.

Note Swap the sour cream for Greek yogurt if you have it. Leftovers keep in the fridge for two days; eat cold or warmed. Serve with tortilla chips, cilantro, and an extra lime wedge on the side, or stretch with warm flour tortillas and shredded cheese.
