Creamy broccoli cheese pasta, from the can

This is a midweek shortcut: pasta coated in Campbell's broccoli cheese soup straight from the can. The soup turns silky under pasta water and butter, with no added cream or roux, and comes together in the time it takes the water to boil.

Serves 2. 20 minutes, 12 at the stove.

  • 1 can (10.5 oz) Campbell's creamy broccoli cheese soup

Staples

  • 8 oz pasta
  • 2 tablespoons butter
  • to taste salt
  • to taste pepper

  1. Bring a pot of salted water to a boil and cook 8 oz pasta until al dente, about 8 to 10 minutes, while you open the can of soup.
  2. Reserve 1 cup of pasta water, then drain the pasta and return it to the pot.
  3. Pour the undiluted soup into the hot pasta and stir in 2 tablespoons butter, adding 1/4 cup reserved pasta water and stirring until the sauce coats the pasta, about 2 minutes.
  4. Taste and season with salt and pepper as needed.

Note Swap in any short pasta shape, or break spaghetti into thirds. Leftovers keep four days in the fridge; reheat in a pan with a splash of water or broth. Serve with a green salad or garlic bread to stretch the meal.
