Campbell's Well Yes chicken noodle soup

This is hardly cooking, but sometimes a good soup is what you need when tired. The Well Yes chicken noodle has enough going on—real meat, beans, vegetables—that you can doctor it into something complete with a little butter and fresh parsley stirred in at the end.

  1. Pour the can of soup into a pot, add an equal volume of water, and bring to a simmer over medium-high heat, stirring once, until steaming through, about 5 minutes.
  2. Tear roughly 2 tablespoons of fresh parsley leaves from the stems and stir them into the pot along with 1 tablespoon of butter, then taste and season with salt and pepper to your liking.

Note Swap the water for chicken stock or broth for more depth. Soup keeps four days covered in the fridge and reheats gently on the stove. Serve with crusty bread to soak up the broth, or a simple green salad on the side to balance the meal.
