Chilled yogurt soup with cucumber and apple

A cold yogurt soup that's refreshing and bright, built on the apple-cucumber drink in your fridge. The live cultures stay active in this no-cook dish, so you get the probiotics straight, and dinner comes together in the time it takes to dice.

Serves 2. 10 minutes, 10 at the stove.

  • 1 medium cucumber
  • 4 or 5 radishes

  • 1 bottle, about 7 oz apple cucumber low-fat greek yogurt drink, apple cucumber (Chobani)

Staples

  • 1/4 teaspoon salt
  • pinch pepper

  1. Pour the entire bottle of yogurt drink into a bowl and whisk it smooth with 1/2 cup cold water until no lumps remain.
  2. Dice one medium cucumber and four or five radishes into small pieces no more than 1/4 inch across, then stir them into the yogurt base along with 1/4 teaspoon salt and a pinch of pepper.
  3. Divide between two bowls and serve at once, or chill in the fridge until you are ready to eat.

Note Swap radishes for thinly sliced apple if you like the sweetness doubled. Leftovers keep one day, covered. Serve with warm bread or crackers to turn this into a light meal, or add a poached egg to each bowl to make it heartier.
