Strawberry banana yogurt fool

This is a simple British dessert made from whipped yogurt folded with crushed fruit, all in under ten minutes. The Chobani does most of the work here, so you need only a few pantry staples to make something light and substantial for two.

Serves 2. 10 minutes, 8 at the stove.

  • 1 container (7 oz) Chobani yogurt, strawberry banana

Staples

  • 2 tablespoons [30g] butter
  • 1/4 cup [30g] flour
  • pinch salt

  1. Melt 2 tablespoons butter in a small pan over medium heat. Stir in 1/4 cup flour and a pinch of salt until it holds together, breaking the mixture into bite-sized pieces as it colors, about 4 minutes. When the crumble is fragrant and golden brown, turn it onto a plate to cool.
  2. Spoon the entire container of Chobani yogurt into a bowl. Fold gently with a rubber spatula until thick and streaked.
  3. Divide the yogurt between two bowls and top each with half the crumble. Serve right away while the crumble is warm.

Note A foolish variation: layer the yogurt and crumble in glasses for a parfait. Leftover crumble keeps in an airtight container for three days and adds crunch to oatmeal or more yogurt. Serve with a strong cup of tea or coffee after dinner.
