Banana yogurt fool with muesli

This shelf holds only a blended yogurt, so tonight is a quick and light dessert-forward dinner. Layer the yogurt with oats and a sharp citrus curd to balance the sweetness, and call it supper when you need something fast.

  • 2 large eggs
  • 2 tablespoons [28 g] butter
  • 2 tablespoons lemon juice concentrate or fresh lemon juice
  • pinch salt
  • 3 tablespoons sugar

  1. Make a quick lemon curd by whisking 2 large egg yolks with 3 tablespoons sugar and 2 tablespoons lemon juice in a heatproof bowl. Set the bowl over a pot of barely simmering water and stir constantly until the mixture reaches 160°F [71°C] and coats the back of a spoon, about 6 minutes. Remove from heat, stir in 2 tablespoons butter and a pinch of salt until melted, then let cool for 5 minutes.
  2. Toast 1 cup rolled oats or muesli in a dry skillet over medium heat, stirring often, until fragrant and beginning to brown, about 5 minutes. Transfer to a plate.
  3. Divide the banana yogurt between two bowls or glasses. Dollop 2 tablespoons lemon curd into each bowl, then swirl gently to create streaks. Sprinkle the toasted oats over the top and serve at once.

Note Swap the lemon curd for honey or store-bought jam if you prefer not to cook egg yolks. The curd keeps covered in the fridge for a week; the yogurt is best eaten the day it is opened. Serve with a strong cup of tea or coffee alongside to cut the sweetness.
