Lemon yogurt chicken with herbs

A quick marinade of sweet lemon yogurt and garlic cooks chicken through in the time it takes to boil pasta. This shelf gives you the sauce already made, so dinner comes together in one pan beside a pot of water.

  • 1 cup [240 grams] blended lemon & cream whole milk greek yogurt
  • 1 lemon

  • 8 ounces pasta

  1. Bring salted water to a boil in a large pot and cook 8 ounces of pasta until two minutes before tender; reserve one cup of cooking liquid before draining. While the pot heats, pat dry two 8-ounce chicken breasts, then cut each into three thick pieces. Mince 2 cloves garlic.
  2. Whisk together 1 cup yogurt, the minced garlic, salt, and pepper in a bowl until smooth. Heat 2 tablespoons oil in a large skillet over medium-high heat. When the oil shimmers, lay the chicken pieces in the pan and sear without moving them for three minutes, until the undersides turn golden.
  3. Turn each piece over and cook for two more minutes. Pour the yogurt marinade into the skillet around the chicken, turn the heat down to medium, and simmer for eight to ten minutes, turning the pieces once halfway through, until the internal temperature reaches 165°F [74°C]. While the chicken cooks, drain the pasta and chop the fresh herbs.
  4. Squeeze the lemon juice over the chicken in the pan and stir in up to one cup of the reserved pasta liquid to loosen the sauce to your preferred thickness. Taste and adjust the salt and pepper. Divide the pasta between two bowls, top with the chicken, and spoon the sauce over all. Sprinkle with the fresh herbs and serve right away.

Note Swap diced tomatoes and paprika for the yogurt if you prefer a red sauce. Leftovers keep refrigerated for three days and taste fine cold or gently warmed. Serve with roasted vegetables or a simple green salad on the side.
