Peach yogurt pork chops

This shelf is mostly dessert, so we lean into the peach and cream to make a quick pan sauce for pork. The yogurt melts into something between a glaze and a gravy, sweet enough to feel indulgent on a weeknight.

  • 2 pork chops, 1 inch thick
  • 1 small bunch fresh thyme or rosemary

Staples

  • 2 tablespoons oil

  • 2 cloves garlic
  • 1 tablespoon butter

  1. Heat 2 tablespoons oil in a large skillet over medium-high heat. Pat 2 pork chops dry and season both sides with salt and pepper. Sear them 4 to 5 minutes until golden, then flip and cook 4 to 5 minutes more until an instant-read thermometer reaches 145 °F [63 °C]. Transfer to a plate.
  2. Reduce heat to medium and add 1 tablespoon butter and 2 minced garlic cloves to the pan, stirring until fragrant, about 1 minute. While the garlic cooks, tear a few fresh thyme or rosemary leaves from the stems.
  3. Pour in 1 cup of the yogurt and the torn herbs, whisking to combine. Let it bubble gently for 2 to 3 minutes until the sauce thickens slightly and reduces. Taste and adjust seasoning with salt and pepper.
  4. Return the pork chops to the pan to warm through in the sauce, about 1 minute on each side.

Note Swap pork for chicken thighs, which need 12 to 15 minutes per side. The sauce keeps refrigerated up to three days and reheats gently over low heat. Serve with rice or crusty bread to catch every spoonful.
