Chocolate orange mousse with crushed hazelnut

This layered yogurt was made to be eaten straight from the pot, but tonight it becomes a real dessert mousse folded with whipped cream and scattered with toasted nuts. Turns out a shelf of one ingredient cooks dinner when that ingredient is half the kitchen already.

Serves 2. 12 minutes, 12 at the stove.

  • 1/2 cup [120 milliliters] heavy cream
  • 1/4 cup [30 grams], roasted hazelnuts

  • 1 container chocolate orange layered greek yogurt, chocolate: orange (Chobani)

Staples

  • 2 tablespoons [28 grams] butter
  • pinch salt

  1. Pour the entire container of chocolate orange yogurt into a bowl and whisk until smooth and combined. This mousse is already sweet and flavored; you are just making it uniform.
  2. Chop the 1/4 cup hazelnuts into irregular pieces and warm them in a dry pan over low heat with 2 tablespoons butter and a pinch of salt for 2 to 3 minutes, stirring once. The nuts will smell toasted; tip them onto a plate to cool.
  3. Whip the 1/2 cup heavy cream in a separate bowl until soft peaks form, about 2 minutes of work.
  4. Fold the whipped cream into the yogurt mousse in two additions, keeping it light and leaving some visible streaks. Divide into two bowls, scatter the warm hazelnuts on top, and serve right away.

Note Swap the hazelnuts for toasted almonds or walnuts if that is what you have. The mousse keeps refrigerated in a single bowl for one day before the cream softens. Serve with strong coffee or an orange liqueur on the side.
