Lemon yogurt pasta with garlic and herbs

Greek yogurt stirred into hot pasta becomes a silky sauce; the fino lemon yogurt here adds bright citrus without extra acid. This shelf gives you a weeknight dinner that tastes fresher than the sum of its parts, and you'll have it on the table in twenty minutes.

  • 1 cup [227 grams] Chobani fino lemon low-fat Greek yogurt

Staples

  • 6 ounces [170 grams] pasta
  • 2 cloves garlic
  • to taste salt
  • to taste pepper
  • 2 tablespoons oil
  • 1 tablespoon butter

  1. Bring a large pot of salted water to a boil and add 6 ounces pasta; cook until just tender, stirring once halfway through.
  2. While the pasta cooks, mince 2 garlic cloves and warm 2 tablespoons oil and 1 tablespoon butter in a large shallow pan over medium heat; add the garlic and cook until fragrant but not brown, about 30 seconds.
  3. Scoop 1 cup of the hot pasta cooking water into a bowl, then drain the pasta into a colander.
  4. Off the heat, stir 1 cup Chobani fino lemon yogurt into the garlic oil until combined; if the sauce seems thick, stir in 2 to 3 tablespoons of the reserved pasta water.
  5. Add the drained pasta to the yogurt sauce and toss gently to coat, adding more pasta water if needed to reach a creamy consistency; taste and adjust salt and pepper.

Note Swap the Chobani for any plain Greek yogurt and add a squeeze of fresh lemon juice instead. Leftovers keep for two days in the fridge and reheat gently with a splash of water. Serve with a green salad and grated cheese if you like, or a crisp white wine.
