Peach yogurt panna cotta with shortbread

Panna cotta is the weeknight dessert that tastes like you tried. With just peach yogurt, cream, and a touch of sugar, you get a silky, fruit-forward custard set with gelatin. Serve it with store-bought shortbread or a few dry biscuits.

Serves 2. 30 minutes, 10 at the stove.

To buy

  • 1 teaspoon gelatin powder
  • 1/2 cup heavy cream

  • 1 cup peach non-dairy blend, peach (Chobani)

  1. Pour 1 cup of the peach yogurt and 1/2 cup heavy cream into a small pot. Warm over medium heat, stirring often, until just steaming; do not boil. This takes about 5 minutes.
  2. Sprinkle 1 teaspoon gelatin powder over 2 tablespoons cold water in a small bowl and let sit for 1 minute to bloom. Stir the bloomed gelatin into the warm yogurt mixture until fully dissolved. Remove from heat and stir in 2 tablespoons sugar and a pinch of salt.
  3. Pour the mixture into two serving glasses or bowls and refrigerate until set, about 20 minutes.

Note Swap gelatin for a tablespoon of cornstarch whisked into cold water to set, though the texture will be less silky. Covered panna cotta keeps in the fridge for two days. Serve with shortbread biscuits, buttery crackers, or a thin slice of pound cake on the side.
