Pineapple coconut yogurt chicken

A quick weeknight marinade turns chicken into something bright and tangy, with tropical sweetness from the yogurt. This shelf's creamy yogurt becomes a pan sauce while the chicken rests, needing nothing more than rice or bread to soak it up.

  • 1 lb [450g] boneless chicken breasts

  • one 5.3 oz container [150g] pineapple coconut blended low-fat greek yogurt

  • 2 tablespoons oil
  • to taste salt

  • 2 cloves garlic

  1. Pound two chicken breasts to an even half inch thick. Mix three-quarters of the yogurt container with 2 minced cloves garlic, a pinch of salt, and pepper in a bowl, then coat the chicken and let it sit while you heat 2 tablespoons oil in a large skillet over medium-high heat.
  2. When the oil shimmers, lay the chicken in the pan and cook without moving it for four minutes until the bottom is golden, then flip and cook another four minutes until cooked through.
  3. Transfer the chicken to a plate. Reduce heat to low, stir the remaining yogurt into the pan, and warm it gently for one minute, scraping up any browned bits. Taste and season with salt and pepper.
  4. Slice the chicken and pour the sauce over it.

Note Swap the chicken for firm white fish fillets, cooking them three minutes per side. The sauce keeps in the fridge for two days. Serve with jasmine rice or warm bread, and a side of steamed greens to balance the sweetness.
