Strawberry banana yogurt parfait with granola

This is a no-cook dinner built on what's in the bottle: sweet yogurt drink layered with granola and fresh fruit for crunch and substance. It's fast when you're tired, naturally sweet without being heavy, and comes together in the time it takes to set a table.

Serves 2. 5 minutes, 5 at the stove.

  • 1 cup granola
  • 8 oz fresh strawberries

  • one 32 oz bottle strawberry banana greek yogurt drink

Staples

  1. Wash and slice 8 oz fresh strawberries into halves. Pour half the yogurt drink into two bowls or glasses.
  2. Top each portion with half of the granola and most of the strawberry slices, reserving a few for garnish.
  3. Divide the remaining yogurt drink between the two bowls and top with the reserved strawberries and a pinch of salt to brighten the fruit.

Note Swap the fresh strawberries for blueberries or peaches if you have them. Eat this cold right away so the granola stays crisp; leftovers will keep overnight in the fridge but the granola will soften. Serve with toast or a piece of aged cheese on the side to make it more of a meal.
